Back in 2009 I had a couple of weeks away from my day job as an optometrist due to stress. I took the time during those weeks to have a bit of ‘me’ time and one afternoon I decided to dust off my cookery books and rustle up some fairy cakes. Six hours later I’d baked seventy cakes and was feeling fantastic. After this, for me baking became a way to relax and unwind.
As a Crayola obsessed child, and a teenager who was never too far away from a sketch book, I have always had a creative soul, so it wasn’t too long before I began to combine my new found love of baking with my artistic side and taught myself to cake decorate. Finally, in early 2011, I turned my hobby into a business and Paisley Immy Cakes was born.
Since starting PI Cakes, I haven’t stopped. If I’m not trading at one of several local, West Midlands, food and craft fairs, I’m working on bespoke orders or researching into new flavours and designs. Having not just limited myself to cakes, I also make a range of handmade, recycled and up-cycled baking accessories and apparel.
I live in Gravelly Hill, Birmingham. When I’m not baking or crafting, I look after peoples’ eyes for the NHS. I also enjoy scuba diving, comics, socialising with my gaggle of knitters, putting things at 90 degree angles and taking silly photos of my cats.
